Hamburger Vegetable Soup
It’s basic, hardy, and delicious. And it gets even tastier when you eat it a day or two later, so leftovers are even better! The flavors continue to meld together, so it gets a little thicker and more savory as time goes on. I have made this stew and other versions of it, for many years. It’s a favorite with my family, and this particular version is super healthy. I need to add that this recipe is really forgiving - I probably make it a little different each time, but here are the basics. You can add more or less ingredients to it depending on the flavors you like.
Ingredients:
1 lb ground beef
½ medium sized chopped onion
1 large sweet potato
5 (or so) peeled and chopped carrots
2-3 cups peeled and chopped potatoes (I use yukon gold, but any kind works)
2 cups chopped zucchini
2 32 oz of broth- I often use chicken or vegetable broth, but pick your favorite
⅛ -¼ cup of Nutritional Yeast (this has a bit of a nutty flavor, so add to your liking)
Salt, pepper, Janes Krazy Mixed up salt, garlic salt to taste
In a large pot (I use a Caraway dutch oven that holds 6.5 quarts, linked below) cook the ground beef and onion. Add salt and pepper to taste. Once cooked, add the broth, sweet potato and carrots. Let cook on medium/high for about 6-7 minutes just to soften a little. Add the potatoes and boil until everything is almost tender. Add Nutritional Yeast, a little garlic salt and more salt and pepper if desired. Stir well, then add zucchini. Continue to boil until zucchini is tender. Pour into bowls and serve - though it will need to cool a bit first!
It tastes great when served with rolls or sourdough bread (and lots of butter of course!)
**I have also added extra ingredients in the past to switch it up. You can add diced tomatoes, chopped celery, diced mushrooms, corn, or chopped green beans. If you want it a little thicker like a stew, make a roux (1:1 ratio of butter and flour - melt the butter in a dish, slowly add the flour and stir until it is smooth. Then slowly stir into the soup- keep stirring so it blends)
