Banana Bread Bliss

Banana Bread Recipe: one of our family favorites

I received a cookbook for Christmas years ago from my mom.  She had gotten it from one of my cousin’s high school fundraisers where the students' families donated all their favorite (and really tasty) recipes.  I have used the book so many times over the years, it is literally falling apart.  But I went to page 46 (yes, I have it memorized) and made the banana bread recipe today.  It is so moist and delicious- and very easy to make!  I don’t like nuts in it, so I have always made it without.  However, I think it would be a great addition for those who would like a little crunch in the bread. Here is the recipe:

3 ripe bananas

1 cup sugar

½ cup butter

2 eggs, beaten (though I never do!)

8 tbsp milk 

2 cups flour

1 tsp soda

½ tsp salt

1 cup nuts

Cream butter and sugar.  Add eggs and bananas, mix thoroughly.  Add remaining ingredients. Put in greased loaf pans.  Bake at 350 degrees for 1 hour.  Let cool, remove from pans and enjoy!
